Chicken Enchiladas

Who doesn’t love Mexican food? Especially chicken enchiladas?! These are a firm favourite of mine when it comes to Mexican-themed meals. This dish is great for sharing and will defo impress whoever you’re treating. 😉

As well as being a meal packed with flavour, the nutritional value is pretty damn good too. Balanced well with protein from the chicken and beans, carbs from the wrap, beans and corn and fats from the cheese and guacamole. If you don’t want to use chicken you could use another kind of meat or even just extra veggies.

You can make these Chicken enchiladas in no time! Super easy to assemble and throw into the oven to become melty, crispy and delicious. They’ll last 2-3 days in the fridge if you want to save some for later in the week. Costing only €2.38 per serving, they’ll definitely save you some lunch money 😉

Equipment

  • frying pan
  • chopping knife

  • Baking dish/tin

Ingredients
  

  • 500 g diced chicken breast
  • 2 peppers sliced
  • 1 red onion sliced
  • 1 packet enchilada seasoning (or use paprika with cumin,chilli powder and onion powder)
  • 1 jar tomato pasta sauce (500g)
  • 4 wraps
  • 200 g grated cheese mozzarella or cheddar work well
  • 100 g black beans or can use pinto or kidney beans

Instructions
 

  • Fry the diced chicken on a medium heat for 3 minutes and add sliced peppers and onion
  • Cook further for 5 minutes until chicken is fully cooked and add the beans & enchilada seasoning. Cook for another 2 minutes
  • To assemble enchiladas: Spread one spoonful of tomato sauce in the centre of the wrap, add a sprinkle of cheese & a spoonful of the chicken mix
  • Fold the wrap over and tuck it in so no fillings fall out. Place in a large baking dish. Repeat this step until all chicken is used up
  • On top of the folded wraps, add the remainder of the tomato sauce and the grated cheese
  • Cook in a preheated oven at 200 degrees for 20 minutes until the cheese becomes melty and brown
  • Enjoy by itself or with some homemade guacamole 🙂
