Cookies are one of my favourite treats, especially when they are a no-bake recipe and are super quick to whip up. Ain’t nobody got time to wait years for a batch of cookies to be prepped, baked and cooled.
These no bake cookies were inspired by my cookie dough protein balls and have a very similar composition and flavour. Just add all the ingredients into a bowl, mix, form into cookies and eat! So easy 🙂
Also, these cookies are packed with protein and good quality, nutritous ingredients. It literally would be rude not to have a few 😉
All you need is 6 ingredients and 1 bowl.

No bake chocolate chip cookies
Equipment

Ingredients
- 50 g oat flour
- 50 g ground almonds
- 100 g almond butter can use any nut butter
- 1 tbsp maple syrup
- 1 pinch salt
- 50 g chocolate chips
- 10 ml water to combine mix if needed
- 1 scoop vanilla protein powder optional
Instructions
- Add the oat flour, ground almonds, salt and protein powder in a bowl and mix
- Add the almond butter and maple syrup and mix. You should have a thick dry dough (not wet) at this stage and if you don't, add a little water to help combine
- Divide the mix into 6 and shape and flatten into cookies with your hand. Add the chocolate chips into the cookies at the end
- Eat straight away or refrigerate for 15-20 minutes for a firmer cookie
