White Chocolate Chunk Blondies

Ingredients
  

  • 100 g oat flour blended oats
  • 50 g ground almonds
  • 2 tbsp coconut flour if you dont have this just use a little extra ground almonds (2 tbsp)
  • 75 g white chocolate chunks
  • 1 tbsp vanilla extract
  • 100 ml milk I used cashew milk
  • 70 g honey
  • 100 g almond butter
  • 2 eggs

Instructions
 

  • Add the oat flour, ground almonds & coconut flour in the bowl and stir
  • Add the almond butter, honey, vanilla extract and eggs and mix well
  • Add the milk and beat further. You should have a smooth batter
  • Add 2/3 of the chocolate chunks and stir in
  • Transfer the mix into a lined square baking tin (use greaseproof paper) and spread evenly
  • Top the mix with the remaining chocolate chunks
  • Bake in a preheated oven at 180 degrees celcius for 30-35 minutes
  • Leave to cool for at least 20 mins and cut into 9 squares
